Depends on what you want the server to do but I use E-Smith 5.6, easy to configure Email, proxy, web and Samba server. Can even handle being a domain controller with roving windows profiles. Hardware requirements are low too.

Did I mention it is free too???

Is Debian. It's the install once and maintain forever Distro of Linux...
You can pick your bleed level, do on-line upgrades, even recover from MASSIVE stupidity...
BUT, it is not for the Newbie to Linux at all...

Should help you understand WHY I say so...

For a server? Debian or a BSD variant. Both are solid, and mature.
